20-Minute Soda Bread for St. Patty’s Day

Warm, rich, sweet and so homemade. It only takes 20 minutes to mix, 50 minutes to bake at 350º. Here’s an easy but DELICIOUS recipe for Irish soda bread and a must eat on St. Patrick’s Day.

4 c. flour

1 c. sugar

1½ tsp. baking powder

1 tsp. baking soda

1 tsp. salt

1 (15 oz.) box raisins

¾ stick butter or margarine

2 eggs, well beaten

2½ to 3 c. buttermilk

Preheat oven to 350º. Mix flour, sugar, baking powder, baking soda, and salt together. Add raisins and mix. Mix buttermilk, eggs, and butter together, and add to the dry ingredients. Batter will be very moist. Pour into two greased 8 x 4-inch bread pans. Bake for 50 minutes or until a knife inserted into the middle of the loaves comes out clean.
